Zucchini Shrimp Alfredo
Crop top weather is near my friends! I don't know about y'all, but I'm trying to be snnnaattcchheedd this summer. Unfortunately, that means my best friend pasta and I had to break-up. :( No worries though, this QUICK creamy delicious Zucchini Alfredo pasta will have you feeling like you're at Kolive Garden. (Kolive because it ain't as good as Olive Garden but it gets the job done)This pasta is bomb and most importantly LOW CARB. You can enjoy this meal without thinking about the excess calories.
THINGS YOU'LL NEED
Spiralizer (I got mine from Bed Bath and Beyond but they sell them everywhere) This tool will help you get the perfect zoodles
Butter (Grass-Fed) is the healthiest, however, regular butter will due
1 tablespoon of Olive Oil
1 tablespoon of minced garlic
Shrimp or Chicken (whichever you prefer)
Raw Cashews (soak in water for at least 24 hour) Can skip this part if you want
1/3 cup of low-fat Parmesan Cheese
1/2 teaspoon of salt and pepper
1 tablespoon of sour cream
Cream Cheese
1 red and green pepper
Before Making the Zoodles
1)Raw Cashews (soaked in water for at least 24 hours) You can skip this. I just like mine thick
2)Put your cashews into a blender and blend until cashews or smooth (should look like creamy cheese)
3)Cook your shrimp/chicken (However you usually make it)
4) Cook your peppers (with either butter or olive oil)
STEPS
1) Spiralize your zoodles
2) Melt 1 tablespoon of butter and olive oil in a pan (add your minced garlic to the pan)
3) Add the zucchini and saute for about 3-4 minutes
4) Remove your zucchini from the pan and set it to the side with peppers
5) Add your sour cream, cream cheese, cashew mix (if you want), and parmesan cheese to the pan and stir until creamy
6) Add your shrimp/chicken to the pan then your zoodles/pepper. (Add Salt and Pepper for taste)
7) Add extra parmesan cheese on top if needed (not to much)
Wallah! This meal takes about 15 minutes. You won't be disappointed. If you don't like sour cream/cream cheese you can also make this meal with almond milk. (Look it up) ;D You can also use Zucchini to make spaghetti (my fav) and all other pasta dishes. I can't wait to share more with you!
